Jim’s Improv Vegan Cake Recipe

Adapted from the Basic Vegan Sponge recipe "Another Dinner is
Possible" after my copy of it went on a 9-month holiday into the
aether...

Enjoy!

Ingredients:

Plain Flour
Sugar
Oil
Soy Milk
Lemon Juice
Baking Soda

Pour some flour into a large bowl. That's it, keep pouring. Stop when
it looks like more than a cupcake, but you can still lift the bowl.
Around half the bag, or a bit less, if you're working with a standard
1kg / 2lb bag system.

Add sugar to taste, mixing it in as you go. Add quite a lot. It will
probably need to taste sweeter than you'd like the final cake to be,
it seems to lose some sweetness in the baking.

Add oil little by little, mixing in until the dough is tacky and soft,
but not slippery with oil.

Pour around 1/3 of a carton, or a bit more than a mug, of soy milk
into a bowl. Add a generous squirt/pour of lemon juice and a teaspoon
of baking soda to the milk.

Slowly add the soymilk to the dough until it stops being a dough and
more of a very thick liquid.

Bake it at 180-200 degrees C, 350-400 degrees F, Gas Mark 5-6 for 30
mins or until whatever you stick into it comes out clean.

Leave to cool on a wire rack and then loosen around the edges with a
knife before turning upside down onto the rack, et voila!
